A Peachy, Fun and Sexy Way To Beat The Summer Heat
Okay my friends, Zucchini was so last week. Now it’s all about the peaches. Fresh peaches are here HOORAY! It’s time to celebrate their deliciousness. We have about 2 weeks time to get all the peaches that are ripe from our tree. Then it’s nothing but peaches 24-7. I love them so much I can’t stand the thought of wasting even one of them. This Sex On The Beach Popsicle Cocktail is just a fun and easy way to have a little tipple-tastic time at home. By the way, if you’re not interested in a cocktail (‘cuz not everyone’s so boozy like me) just enjoy the tasty, vegan and dairy free Peach and Coconut Cream Popsicle instead.
I Really Love My Peaches, So Don’t Even Think About Shaking My Tree!
This year, I am intent on not sharing any of our peaches with the birds. Every year it’s a full on battle of who gets to the peaches first. This year, I’m picking them just ahead of the curve. I’m taking them just a bit early and letting them finish ripening in my kitchen. It’s working our great for me, not so well for the birds, the bees or the squirrels.

When I have tons of peaches and little time to do anything with them, this is how I go about it. As soon as they are just ripening, I put a pot of water on to boil. I set up a big bowl of ice water and set it next to the stove. Once the water is boiling, I add 3-4 peaches to the boiling water for about 30 seconds. A little longer if they are not quite ripe. Then, using a big slotted spoon, move the peaches to the water bath. The skins will just slip right off.
Next, I split them and remove the pits and then put them into a freezer bags, marked with the weight. About 5-6 small to medium peaches is 1 lb. Then I freeze them until I’m ready to cook with them. I use them for jams, sauces or even desserts.

Peaches and Cream Popsicle (Vegan and Diary Free)
I use the popsicle molds made of silicone for easy cleaning and release. Here’s a link:
Into your blender, add 4 pitted and skinned peaches. Next, add 3 tablespoons of honey. For a sweeter pop, add 1/4 cup. Add 1 cup of whole fat coconut milk. This is the unsweetened coconut milk, not sweet coconut cream. Blend just about 20 seconds so that is is not completely pureed. You want a little bit of peach pieces.
Fill your pop molds, freeze over night. Pop them out of the mold and enjoy…..or
Sex On The Beach Popsicle Cocktail
Can you imagine the names I came up with for this Sex On The Beach Popsicle Cocktail? I mean seriously, I had to self edit. This is a take on the popular cocktail, Sex On The Beach. I think you’ll have fun serving this around the pool or if you don’t have a pool (like me), just turn on the sprinklers or even just pull out the garden hose and have a time of it. It’s summer and it’s hot AF! You deserve a little cool fun, don’t you think?
This is a truly refreshing cocktail, it’s not too sweet, in fact, a bit tart. Add the Peaches and Cream Popsicle and you might even get to enjoy an old fashioned “Brain Freeze”. Remember those? It’s worth a try.
Into each hurricane glass, add crushed ice to about 3/4 of the top. In this order add 1 1/2 ounces of vodka, then 2 ounces of orange juice, then top with 2 ounces of cranberry juice. To keep it well layered, you can try pouring into the glass over the back of a spoon. To serve, gently add a popsicle into each cocktail. The peach popsicle replaces the peach Schnapps usually added to this cocktail. Serve without stirring.
By the way, this a Sex On The Beach Popsicle Cocktail really requires a lot of cocktail garnish bling! It’s the cocktail of the afternoon, like the Bloody Mary is to mid-morning. You can’t over do it. Make sure you’ve added some, then add a little more. I added a peach slice, an orange section and of course a little paper umbrella is practically mandatory.

Sex On The Beach Popsicle Cocktail (With Peach and Coconut Popsicles)

These cocktails are best made in hurricane glasses)
Ingredients
For the Popsicles
- 2 or 3 peaches
- 1 cup coconut milk (whole fat)
- 3 tablespoons honey
For the Sex On The Beach Cocktail
- 9 ounces vodka
- 12 ounces orange juice
- 12 ounces cranberry juice
- Garnish: Orange or peach slices, paper umbrellas
Instructions
For the Popsicles
- Into your blender, add 2-3 pitted and peeled peaches, 3 tablespoons honey (4 tablespoons for a sweeter popsicle.
- Add 1 cup unsweetened coconut milk
- Blend for about 20 seconds, leaving some bits of peach, not a complete puree.
- Pour into 6 serving popsicle mold.
- Freeze overnight
For the Cocktail
- Into each glass, add crushed ice to about 3/4 full
- For the best look, add in this order: 1 1/2 ounces vodka then 2 ounces of orange juice and top with 2 ounces of cranberry juice. Try pouring into the glass over the back of a spoon to keep the layers separate. Do not stir before serving.
To serve
- Add a popsicle gently to each cocktail
- (Note: The peach popsicle replaces the peach Schnapps usually added to this cocktail.)
- Garnish: Orange slices or peach slices and a paper umbrella too.
