Stop That Car!

Did you know there’s a national “day” for almost anything?  Well, June 4th is National Cognac day.  And, since Cognac is one of my favorite cocktail ingredients, wha-la, my own version of a sidecar cocktail, the Pomegranate Sidecar Fizz Cocktail.  A tart and completely enjoyable combination of cognac, pomegranate, lemon juice and for fun, a frothy finish.  Believe me, this is the cocktail you’d enjoy on a warm summer evening.

Egg White Foam 🥚 

I like to mix a delicious and pretty cocktail from time to time.  The taste and texture of cocktails with a foam on top if really nice.  I know some people are squeamish when it comes to using raw eggs in cocktails, but there is very little to worry about.  First of all, you only use the egg white, not the yolk.  The egg white is pretty safe as any problems generally come from the yolks.  I’m lucky to have my own egg-laying chickens and I never worry.  However, if you do worry about raw egg whites, or you’re vegan, there’s another way to do it.  Use Aquafaba.

I just picked up a few new chickens to add to my crew this weekend.  If you don’t keep chickens, you probably don’t know that it can be fairly traumatic introducing new chickens to your established flock.  The saying “Pecking Order” is so true!  When the newbies come in, the old girls are quite mean girls.  They will keep them from eating and drinking, bully them, you name it.  But, when evening comes, they all go into the coop together and get a good nights sleep.  Then, they’re up and back to it again.  

Eventually, things quiet down and they all fall into their new order.  There’s always a queen bee and always one at the bottom of the heap.

Aquafaba

Aquafaba is the brine in the chickpea can or the liquid that’s left after cooking dried chickpeas.  It’s amazing if not exactly the same as egg whites, it does do a lot of the same stuff.  In cocktails, just replace an egg white for 1 ounce of aquafaba and continue your cocktail shaking as you normally would.

Prepare your cocktail or coupe glass – rim with lemon, then roll the rim in sugar.  Let the sugar dry while you make your cocktail.  For another serving option, make this cocktail a double and serve it in a rocks glass.  Prepare the glass with the sugar rim, but add 1 large square cube to the glass.  Proceed as described below.

This is the dry shake method.  It maximizes the foam in the finished cocktail.

Into your shaker, add 3/4 ounce of freshly squeezed lemon juice, 1 ounce Grand Marnier (or substitute Cointreau), 3/4 ounce Cognac (or substitute brandy) and 3/4 ounce pomegranate liqueur.  Add 1 egg white or 1 ounce aquafaba.  Shake vigorously for about 10 seconds.  Note that you will need to hold tight to your shaker as without the ice, the top will want to pop off.  

Add ice to the shake, continue to shaker another 15 seconds.

Strain into your prepared glass.  Garnish with a very slim lemon twist.  Sip and enjoy!
