It’s made with two of planet earth’s greatest natural ingredients, chocolate and avocado. A few other added ingredients and a food processor are all that is standing in your way of enjoying this rich and decadent little bit of business right now. Want to know how it’s made? Well, it’s easy as pie fudge! And let’s face it, sometimes you just gotta have some chocolate.
I’ve said it before, but living in the Avocado Capital of the World has it’s perks. This time of year, the avocados are dropping from the trees and rolling in the streets. This super food is the perfect substitute for butter. Not just in this recipe, but in almost any recipe from banana bread to pasta sauce.

Salted Avocado Fudge
Line a 8 x 8 pan with parchment paper, leaving some hanging for the sides so that when it’s done, you can easily pull it out of the pan to cut. Set aside.
Into a medium saucepan over medium heat add 3 cups of chocolate chips. You can use dark chips, or semi-sweet. If you’re vegan, make sure to use vegan chips. Add 1 cup of unsweetened cocoa powder, 1 1/2 cups granulated sugar or coconut sugar, 2 teaspoons of vanilla and 3/4 teaspoon of kosher or sea salt. Stir frequently until all is melted. Set Aside.
Into the bowl of your food processor or blender, add your 4 medium size ripe, pitted avocados, that’s about 3 cups of avocado.
Blend until completely smooth.
Next, add the chocolate sauce and again blend until smooth.
Pour into the prepared pan, sprinkle the top with about 1-2 teaspoons of very coarse salt. Cover with plastic and place in the refrigerator to firm up (4-6 hours).
To serve, remove from the refrigerator. Cut into 2 inch squares to serve.
Enjoy!
