I Love Dishes With Fishes!
I keep a few super simple appetizer recipes up my sleeve. You never know who may stop by and want a little nosh with their cocktail! Well, you can count on me, because I’m always at the ready. This one I’ve been making since the beginning of time. For one thing, I love all things smoked salmon and another, it’s just so super easy. It adds a little something special to any soiree. Smoked Salmon Spread with Lemon and Yogurt is great from brunch to cocktail hour and whatever happens in between. It’s just a bit better than a simple schmear. I keep it light with non-fat Greek yogurt and I like to serve it on crackers or on bruschetta.
Maybe during these days of social solitude and distancing, appetizers aren’t top on the list of priorities. The grocery store is scary enough without venturing too far past the essentials isles. But, as they say, this too shall pass and when it does, you will want to have some of this light and tasty Smoked Salmon Spread!

A good friend called recently because she was making a Costco run and wanted to know if she could pick anything up for us. My first thought? Not toilet paper, hand sanitizer or cleaning products. My mind went right to the Norwegian smoked salmon I love so much. I didn’t ask her bring some home to me…….but I really, really, wanted to.
Salmon is one of the few things I see being eaten by animals in the wild (okay, and by in the wild, I mean on my television) that I can actually relate to as being delicious….I mean, I’d dive right in, raw and all. I can also be a little “bearish” when I’m hungry too.
When I go to brunch and they serve smoked salmon, I really embarrass myself and anyone who is seen with me. When I find that platter of perfectly chilled, smoked salmon, I go positively bananas. I’m that one who just can’t get enough of it. I enjoy it any way its prepared or just simply served, no embellishment necessary. I am the one elbowing in and trying not to make too much of a mess of it, my apologies!
Smoked Salmon Spread with Lemon and Greek Yogurt
This recipe uses about 8 ounces of smoked salmon (or lox). First, add 4 ounces of the salmon to the bowl of your food processor. Add the zest and juice of 1 lemon, 1/8 teaspoon of cracked black pepper, 1 tablespoon of extra virgin olive oil and 1/4 cup of whole or non fat Greek yogurt. I add a little cayenne pepper for heat, just about 1/8 teaspoon or to taste.
Work the processor until smooth. Remove to a small, non-reactive mixing bowl. Best to use ceramic or stainless steel.
Roughly chop the remaining 4 ounces of salmon and mix just to combine.
Taste and adjust the seasoning if necessary. Garnish with lemon wedges or wheels and a bit of fresh parsley or dill.
Serve with crackers or grilled bread and even as a lighter substitute to cream cheese with lox on your bagel. enjoy!
