Make Mine Spicy
A Pineapple Jalapeno Margarita is the perfect hot weather cocktail to refresh you . Truth is, the first time I tried a cocktail that featured jalapenos, it was a bit like a scary love story. I was completely drawn to the delicious flavor, while being a bit afraid of the hot and spicy sipper. Doesn’t that sound like the perfect attraction? Well, it you’re one to like a little extra spice in your life, give this Pineapple Jalapeno Margarita a try! It’s a little hot, juicy and boozy. It’s a tipple-tastic-trifecta.
When you sip this cocktail, the flavor of the jalapeno comes through and the heat is just right. You get the taste of the jalapeno with the cooling flavor of pineapple. It’s a great way to enjoy a margarita.
Spicy, Sweet and Salty Rim and Garnish Options!
You can try a few and see which ones you like best.
One option is to combine equal parts granulated sugar and black pepper in a shallow dish. Wet the rim of the glass with the lime wedge and and gently rotate the rim into the sugar and pepper mix to coat the edge of the glass evenly. The other option, wet the glass with the lime, but simply roll the rim into a shallow dish of black lava salt.
Black lava salt is my favorite. I use it for garnishing cocktails because it’s so dramatic. But I also use it to finish dishes when cooking. It’s got a great taste and it’s coarse too. It also adds a lot of flavor. This is my favorite for this cocktail. Let me know which one you like best!
For the garnish, I like to float 1 or 2 rings of jalapeno, then add a piece of fresh pineapple and a jalapeno ring to the rim. Try adding a wedge of lime as well.
For the Cocktail
Into a cocktail shaker, add 1 inch chunk of pineapple and 1 round of jalapeno. Muddle gentle to release the flavors, about 20 seconds. If you don’t have a muddler, use a wooden spoon.
Next, into the shaker, add a handful of ice. Then, add 3/4 ounce orange liqueur (Grand Marnier, Cointreau, Triple Sec or even orange curacao), 1 1/2 to 2 ounce of tequila, 1/2 ounce each of fresh lime juice and pineapple juice. Shake vigorously, about 20-30 seconds.
Strain over fresh ice into the prepared rocks glass. Garnish with a wedge and fresh pineapple and a round of fresh jalapeno.
Ingredients
- 1 1/2 to 2 ounces tequila (silver or gold)
- 3/4 ounce Grand Marnier, Cointreau or Triple Sec
- 1 piece of fresh pineapple (about 1 inch cube)
- 1 jalapeno round, thinly sliced
- 1/2 ounce Fresh lime juice
- 1/2 ounce Pineapple juice
Garnish:
- Lime wedge
- Pineapple chunk
- jalapeno round
For the Glass Rim
- 50/50 granulated sugar and black pepper
- or
- Black Lava Salt
Instructions
For the Glass:
