I’m going to say it, she’s my “wish-ta-gram”. That means, I wish I was as clever, funny and 10% as patient. You’ll understand the patience when you see what she can do with chickens! The one thing I can say for sure, is that before I found this blog, I thought I was the only one who loved to drink with my feathered friends. So, based on the number of followers at @drinkingwithchickens, there are quite a lot of us that enjoy imbibing with our foul poultry pet chickens. It’s a real thing. But even if you don’t have any feathered friends to cocktail with, try this tasty tipple with any human or non-human you enjoy spending time with. It’s positively tiki-licious.

Meyer Lemons
For years I underappreciated the Meyer Lemon. I was a lemon purist, I suppose I thought the Meyer was a lemon fraud. It’s actually a combination between a lemon and a pomelo, which is a sort of an orange. In the fruit world, the pomelo gets around! It’s less tart than a regular lemon. The truth is, its a great mixer for cocktails. Make a batch of Meyer lemonade and you’ve got a party going on, just add your favorite booze. It works equally well with gin, vodka, tequila, bourbon……well, you get my drift, right?

Meyer Lemon Colada Cocktail
First, freeze about 1 quart of coconut water in ice cube trays. If this is a spontaneous drinking spree, it’s okay to use regular ice cubes!
Chill your hurricane glasses or use something tiki-ish!
Fill your blender 1/2 full of the coconut ice cubes or regular ice cubes. Add 12 ounces of freshly squeezed Meyer lemon juice, 8 ounces of light run and 8 ounces of lite coconut milk. Use the unsweetened kind from a can. Add 4 ounces of Falernum syrup https://amzn.to/2WN0b36 It’s a spicier version of Orgeat https://amzn.to/2XlS9T3 These are the classic additions to many tiki cocktails.
Blend until smooth and serve!
Notes
Best Glass For This Cocktail - Hurricane or similar tiki inspired glasses
Ingredients
- 12 ounces freshly squeezed Meyer Lemon juice
- 8 ounces lite coconut milk, canned, unsweetened
- 8 ounces light rum
- 4 ounces Falernum syrup or Orgeat
For frozen Ice Cubes
- 1 quart coconut water frozen in ice cube trays
- Garnish: Lemon Twist or Wheel
Serve in a hurricane glass with a paper parasol
Instructions
For the Coconut Water Ice Cubes
- Freeze 1 quart of coconut water in ice cube trays. (or substitute with regular water ice cubes)
For the Cocktail
- Fill your blender 1/2 full of the coconut ice cubes or regular ice cubes.
- Add 12 ounces of freshly squeezed Meyer lemon juice
- 8 ounces of light rum and 8 ounces of lite, unsweetened coconut milk.
- Add 4 ounces of Falernum syrup or Orgeat syrup.
- Blend until smooth and creamy
Garnish
- lemon twist or lemon wheel with a paper parasol
