A Do-Zen Doughnuts, Please!🍩

One of my favorite desserts when I was a kid (and still is)  was Green Tea Ice Cream from Benihana Restaurant.  Back then, we had no idea what green tea was, let alone matcha tea.   All we really knew was how we looked forward to the creamy, earthy, but not too sweet flavor.   I’m sure that’s why I chose that restaurant, year after year to celebrate another birthday milestone.  Oh sure, we loved the samurai-like chefs hurling hot bits of food towards us too, but it was the matcha that kept us coming back.

And another.   I think I’ve made my point.   And, if you’ve noticed the lavender sweater, that’s my friend Helene.  She wore the same sweater to all my birthdays. I bet she never thought of a blog in the late 70’s or early 80’s where I would document this phenomenon.  

I always loved it so, even though, I’ve never cared for drinking tea.  Here’s a popular way to use that delicious and versatile flavor of matcha tea.  I promise you’ll enjoy these delicious  Matcha Baked Doughnuts with Sweet Tea Glaze.

Green Tea For Good Life

Green tea is the ancient super food getting more widely used and  popular year after year.   It’s touted for helping all ailments from inflammation to fighting cancer and weight loss.  Green tea even helps brain function and makes you smarter🤯.   (So, I will have two Matcha Baked Doughnuts✌️, thank you very much!)   I highly doubt eating  Matcha Baked Doughnuts with Sweet Tea Glaze is going to help me on my weight loss journey, but it will put a smile on my face🥰.  That’s a super important life changing benefit as well, right?  This might be the next famous food match-up, like a double-double burger and a diet coke.  Just kidding, remember, these are better than your average doughnuts, they’re baked, not fried.  You’re winning already!

These doughnuts come up super moist and delicious.  I promise you won’t be disappointed!

Matcha Baked Doughnuts 🍩 

Preheat oven to 425°.  Lightly spray two standard, non stick doughnut pans with cooking spray, set aside.

In a medium-sized mixing bowl, beat together 4 tablespoons of room temperature, softened butter (or substitute the butter for one large, ripe avocado, about 1/2 cup) with 1/4 cup vegetable oil.  On combined, of granulated sugar (you can use any favorite granulated sugar you prefer) and 1/3 cup brown sugar.  Continue to mix and add 2 large eggs, one at a time, continue to mix another minute or so.  

The avocado is a great butter substitute and creams with the sugar just like butter does.  Give it a try, it’s a great butter substitute in lots of baking, but what the heck, these are green doughnuts anyway, right?

Add 1 1/2 teaspoons of baking powder, 1/4 teaspoon of baking soda and 3/4 teaspoon of salt with 1 1/2 teaspoons of vanilla extract and 2 teaspoons of matcha green tea powder.  Mix the ingredients about 1 minute.  

Slowly add 2 2/3 cups all-purpose flour to the mixture, alternating with 1 cup buttermilk until combined, careful to not over mix.  The batter will be thick.

Fill and Bake

Using a spoon, fill the prepared doughnut pans just to the top.

You can also put the batter into a large plastic bag, snip the corner and pipe into molds.

Bake for about 10 minutes.  Remove from the oven and let them cool about 10 minutes before removing them to a wire rack to cool completely.

Match Sweet Tea Glaze 

For this lovely glaze, into a medium-sized bowl, add 1 egg white and whisk it until it is very light and frothy.  Whisk in 2 teaspoons of matcha powder, a pinch of salt and 1 tablespoon of freshly squeezed lemon juice.  Slowly add 2 cups of confectioners/powdered sugar until it’s smooth.

Dip the doughnuts into the glaze, top side only or drizzle as desired.  Smooth the glaze with a off-set spatula, then  top with your favorite things.  I used a mixture of sugar and matcha on some, some green sprinkles and some white candies and also some rainbow sprinkles.  Some other ideas include chocolate chips, toasted sesame seeds, rainbow sprinkles, or toasted slivered almonds.  Whatever you like, the skies the limit!
