A Beautiful and Fresh π πΌCocktailπ
Its holiday tipple time again! This fruity bourbon cocktail is so refreshing and full of holiday-cheer. Itβs a Bourbon Pomegranate Mule. Made with a fresh rosemary simple syrup, fruit juices and of course, my favorite cocktail ingredient, bourbon! π₯ Topped with plenty of sparkling ginger beer itβs garnished with fresh oranges and pomegranate seeds. Itβs pretty and delish! So, if the weather outside is frightful βοΈ (or not) βοΈthis is a downright refreshing little sipper.
A Mule?
Whenever I think of a Mule cocktail, A Moscow Mule comes to mind. It’s served in a pretty copper mug and it’s made with ginger beer and mint with lime and vodka. Well, I really don’t care for mint and I’m actually on the fence about ginger beer. However, when I added the ginger beer to this cocktail, it was perfectly refreshing. Although this is a bit of a holiday cocktail, I think it’s perfect anytime of year.
The Recipe
Rosemary simple syrup gives this cocktail a wonderful sweet but herbal taste. It’s really nice and I think if you try the infused simple syrup, you’ll find it goes it all kinds of cocktails instead of just a sugar/water combination. Ginger beer is non-alcoholic and it adds a nice sparkle to the cocktail and lightens up the alcohol content. This is a lovely brunch cocktail. Imagine, watching the New Years Day tradition, Tournament of Roses Parade with this lovely cocktail.
Into a saucepan, add 1/2 cup sugar and 1/3 cup water. Heat on medium heat to melt the sugar. Add two nice sprigs of fresh rosemary.
Once the sugar has completely melted, remove from the heat and let the syrup cool with the rosemary, at least 1 hour. Discard the rosemary and chill the syrup.
To make the cocktail, add ice to a cocktail shaker filled about 1/2 way with ice. Add 2 ounces of bourbon, 3 ounces of pomegranate juice and 1/2 ounce of the rosemary syrup. Shake vigorously, the strain into a mule glass that is filled with ice. Top with ginger beer (at least 3 ounces).
Garnish with fresh pomegranate seeds, a rosemary sprig and a little squeeze of fresh orange and a orange peel.

For the Cocktail
- 2 ounces bourbon
- 3 ounces pomegranate juice
- 3 ounces ginger beer
- 1/2 ounce rosemary simple syrup
- squeeze of fresh orange juice from about 1/3 of an orange
Garnish: Pomegranate seeds, orange wedge, rosemary sprig
For the Rosemary Simple Syrup
- 1/2 cup granulated sugar
- 1/3 cup water
- 2 sprigs (about 3-4 inches each) fresh rosemary
Instructions
