Here’s a scrumptuous and lively holiday cocktail! Its guaranteed to warm you from the inside out. Filled to the brim with sugar and spice and all things nice. A Pumpkin Spice Whiskey Latte Cocktail. This is what the fancy coffee places would be serving, if they could, and you can make it at home. There’s a tiny bit of prep work, but it’s worth it! My recipe is for a batch, so invite your friends. This is a great offering for a holiday brunch or after a day of shopping.
I really do love pumpkin spice lattes. I look forward to their arrival each year and treat myself to at least one each season. Here’s a easy to follow recipe and the whiskey, just like the whipped cream on top, is totally optional.
Pumpkin “Pie” Spice
This time of year I usually make my own batch of pumpkin Pie spice. I mix it up and keep it in a jar with a tight lid. Then, anytime I need a bit for any type of baking (or “cocktailing”), it’s ready to go in an instant. Here’s my recipe!
Into a small bowl, add the following: 2 tablespoons of ground cinnamon, 2 1/2 teaspoons of ground ginger, 1 1/2 teaspoons of ground nutmeg and 1/8 teaspoon of ground cloves and 1/8 teaspoon of allspice. Whisk together to combine, then pour into a jar with a tight lid. Keep in a cool dry place and you’ve got a good start on your season of cooking (and drinking).
The Pumpkin Spice Whiskey Latte Cocktail
Into a slow cooker set on high, add 1 cup of bourbon or Irish Whiskey. Next add 5 cups of freshly brewed coffee, decaf or regular, depending on the time of day!. Add 1/4 cup of pumpkin puree (not pumpkin pie filling) , 2 teaspoons of vanilla extract, 1 1/2 teaspoons of pumpkin pie spice. Use either my recipe above, or store bought pre-made spice. Add 2 cups of whole milk and 1/2 cup of heavy cream or heavy whipping cream. Next, add 1/2 cup of granulated sugar. Whisk everything well to combine then let the slow cooker do its thing for about 1-2 hours to let the spices and the pumpkin flavor the coffee and the booze.
Whip the rest of the cream with 1 tablespoon confectioners sugar and 1/2 teaspoon vanilla extract. Serve the hot lattes in mugs and top with fresh whipped cream and a fresh bit of grated nutmeg. It’s pretty when garnished with a cinnamon stick. Cheers!

For the Pumpkin Spice
