My husband just celebrated one of those milestone year birthdays 🎉 . I won’t say which one, but it was a big one! You can’t celebrate a birthday like that with just one or two or even three days. It’s a weekend of fun stuff and too much food. He doesn’t go overboard with much, but one thing he really likes is waffles. So, for his special day, a little spin on the ordinary. Buttermilk Waffles with Fresh Rosemary.
The addition of the savory herb flavor makes delicious homemade waffles taste amazing. Honestly, you can think of so many things to make with a herb flavored waffle.
Serving it the traditional way with a little sweet, creamy butter and real maple syrup is just perfect too! Here’s how you can make delicious and perfectly tender buttermilk waffles with Fresh Rosemary.
Buttermilk Waffles with Fresh Rosemary
When we first moved into our house almost 13 years ago, we planted a ton of rosemary. Why? It’s beautiful 😍 , it smells divine 🤗, its water 💦 friendly, it’s said to be a deterrent to squirrels 🐿 (although, I’m not convinced) and I use it a lot! I’ve never counted, but I bet we have more than 30 rosemary plants around this place.
When cooking with fresh rosemary, I have two rules I stick with. First of all, always mince it really finely. The second, only use fresh. Dried rosemary in cooking is terrible. I don’t know why they even sell dried rosemary. If you have any good ideas of how to use it, let me know.
The Recipe – Buttermilk Waffles with Fresh Rosemary Topped with Melting Butter and Warm Maple Syrup!
Melt 1/3 cup butter and set aside. Into a medium sized bowl, add 2 cups all-purpose flour and 2 tablespoons granulated sugar, 2 teaspoons of baking powder, 1 teaspoon baking soda and and 1/2 teaspoon salt. Next, add 1 tablespoon of very finely minced, fresh rosemary. Whisk to combine, set aside.
In a separate bowl, add 2 cups of buttermilk and 1 teaspoon vanilla extract and 3 egg yolks. Mix well. Put the egg whites into a separate bowl and beat on high with the whisk attachment until they are soft fold. Add the wet mixture and the melted butter to the dry mix and stir to combine. Don’t over mix, just enough that everything is mixed in. The batter will be lumpy. Then, fold in the egg whites.
Heat your waffle iron. I spray with a non-stick spray, but you can also lightly brush with melted butter. Add about 1/3 cup of the mixture for each waffle.
Make sure to cook until they are very golden brown. If necessary (and it always is with me) put the finished waffle into the toaster oven if you cannot serve it pipping hot.
Heat pure delicious maple syrup and top the waffles with a little butter, then the warm maple syrup. Hello There! Who wouldn’t love that on their birthday?
