Sometimes, you just want to sip something a that’s a little fun and a little tropical. This Toasted Coconut Martini does the trick, without being too overly sweet. You know I love me some coconut! This one gets it’s pretty look with a glass rim, dressed up with toasted, sweet coconut. Here’s how you can make this dreamy concoction too. It’s lighter than those heavy and too sweet coconut mixers. You can tell the difference.
The Simple Syrup
To make the coconut simple syrup, add 1/2 cup sugar and 1/2 cup water into a small sauce pan. Heat to simmer, then continue to cook about 3 minutes, until the sugar has dissolved, remove from heat. Add 1 teaspoon coconut extract. Let the syrup chill. Keep in a jar, refrigerated for up to 1 month.
The Toasted Coconut Rim
Start with the rim. Lightly coat the glass rim with honey. This will keep the toasted coconut secured to the rim. On a shallow baking dish, add a few tablespoons of sweetened coconut and toast for a few minutes until lightly brown. Lightly roll the rim of the glass in the coconut and set aside to set.
The Cocktail!
Into a cocktail shaker filled 1/2 way with ice, add 1 1/2 ounces of vodka and 1 ounce of light rum. Next, add 2 ounces of lite coconut milk and 1 ounce of coconut simple syrup. Shake vigorously for 30 seconds, then strain into your martini glass, and Bob’s your Uncle!

For the Coconut Simple Syrup
- 1/2 cup sugar
- 1/2 cup water
- 1 teaspoon coconut extract
For the Martini
- 1 1/2 ounces vodka
- 1 ounce light rum
- 2 ounces lite, unsweetened coconut milk
- 1 ounce coconut simple syrup
Optional for The Rim
- Toasted Sweet Coconut Flakes
- honey
Instructions
For the Coconut Simple Syrup
- Add 1/2 cup sugar and 1/2 cup water to a small sauce pan and simmer for 3 minutes. Make sure all the sugar was dissolved, remove from heat. Add 1 teaspoon of coconut extract. Chill and store in the refrigerator, in a covered jar, up to 1 month.
Optional For The Rim
- lightly coat the martini glass rim with honey, then roll in lightly toasted sweet coconut flakes. Let the coconut set for about 1 minute, then proceed with the cocktail.
For the Martini
- Into a shaker filled 1/2 way with ice, add all the ingredients and shake vigorously, at least 30 seconds. Strain into prepared martini glass
