Summer’s Sweetest Sipper
There’s still time for this one! Do you have the summer-is-coming-to-an-end-blues? You can fix that fast, with a consummate summer cocktail. This summery standard, a pretty little Peach Bellini cocktail goes from morning to day to evening as easy as (peach) pie! It’s also perfectly swell for 🌞Sun-day drinking! It’s fruity and light, but it packs a real 🥊 punch when a little vodka joins the party.
We never got a real peach bounty this year. Maybe a combo of weather, tree trimming and the fact that last year our peach yield was off the charts. This year we trimmed our tree 🌳 back pretty hard and that along with our very odd weather seems to have taken a toll on my darling peach tree. I finally got a few, just this week, so late August is my new July. They be late, but they be sweet!

If you find yourself with an abundance of fresh peaches that you can’t get to before they become overripe, I suggest freezing the puree. The easiest way is to put a pot of water to boil. Make a cross score in the bottom of each peach. Drop a few at a time into the boiling water for about 20-30 seconds. Remove and then plunge into cold water to stop them from cooking.
Once they are cool enough to handle, the fuzzy skin will come right off with hardly anything but a little swipe of your finger. Then just remove the pits and process with a little lemon juice until you get a smooth puree. Put into a freezer proof bag, remove the air and lay flat to freeze. You could also put the puree into ice-cube molds to freeze, then remove and put into a freezer bag. Then, you can just take what you need during the rest of the peach-less seasons ahead!
In a mixing glass filled with ice, add puree and vodka. Mix well, then strain into champagne flute🥂top with sparkling wine or champagne 🍾 and, Bob’s your uncle! 🍑🍑🍑 Cheers!

- 1 oz peach puree
- 1 oz vodka
- sparkling wine or champagne
Instructions
- In a mixing glass filled with ice, add peach puree and vodka. Stir to combine and chill. Strain into champagne flute and top with sparkling wine or champagne.
