On Top Of Spaghetti All Covered With Goat Cheese

I first learned to love putting goat cheese on pasta back in the early 90’s. That’s when California Pizza Kitchen became popular and you could find one on almost every corner. They had angel hair pasta pomadoro with goat cheese. I loved it! The fresh and tangy goat cheese on tomato sauce adds such a creamy, delicious taste to a very simple to prepare meal. I made my version the other day and my husband was willing to forgo his usual, which is topped with Parmesan cheese and he loved this version.
Weeknight Easy and Company Worthy
Seriously, this is so easy. You can make it in 25 minutes time and it’s an elegant and different way to serve spaghetti. I love this made with angel hair pasta. You can make this with any pasta you love or have on hand. I made this one with spaghetti and it was every bit as delicious. Here’s the easy recipe.

Here’s the recipe with a simple can of good quality canned tomato sauce and 1 can of whole crushed tomatoes.
The Recipe
Fill a pot with water and add about 1 tablespoon of kosher salt. Heat on high until the water comes to a boil. Cook the pasta according to the package directions. While the pasta water is boiling, and before you add the pasta to the water, begin your sauce.
In a medium sauce pan, add 1 tablespoon olive oil and 1 tablespoon butter, melt on medium heat. Add 1 chopped onion and 5 large cloves of minced garlic. Saute until onions just start to brown.
Add 1 tablespoon freshly chopped basil and 1 tablespoon freshly chopped oregano or marjoram. If you don’t have fresh herbs, substitute 1 teaspoon dried herbs for each tablespoons of fresh chopped herbs. Cook for about 1 minute.
Add fresh herbs for the spaghetti sauce
Pour yourself a glass of wine, then add 1/4 cup of red wine to deglaze the pan, and cook for about 2 minutes. Add the canned tomato sauce and the can of whole tomatoes. Crush the tomatoes with your fingers, then add 1 teaspoon salt and 1/2 teaspoon sugar or honey and stir, then simmer for about 15 minutes on low heat.
Drain the pasta water and add the pasta to the sauce and toss to coat well. Transfer to a large serving bowl. Top with chopped fresh basil and goat cheese. Enjoy!

- 12 ounces angel hair or spaghetti
- 1 tablespoon kosher salt
- 1 15 oz can tomato sauce
- 1 14.5 oz can whole tomatoes (crushed by hand)
- 5 large cloves garlic, minced

- 1 tablespoon unsalted butter
- 1 teaspoon salt
- 1/2 teaspoon honey or sugar
- 1/4 cup red wine
- 1 tablespoon fresh chopped oregano (or 1 teaspoon dried oregano)
