No Raw Oysters For You? That’s Okay, Fire Roasted Is Better!
If I were stranded on a deserted island and I could only choose one food to eat, it might be oysters. Specifically, Fire Roasted Oysters. Is anyone else a 100% official member of the oyster fan club? I think you love ’em or you hate ‘em right? I love them all-ways, but this way is absolutely, without-a-doubt, my very favorite way to enjoy 1 or 12!
A number of years ago, we discovered a new favorite restaurant. It’s called Lure Fish House. When you sit at the raw bar, they may just offer you a taste of their delicious roasted oysters. Well, it’s a bit like being a crack dealer, ‘cuz once you try one, you gotta have more. You know how it goes….hey, would you like to try a oyster….then….WHAM! You are hooked.
But the truth is, we discovered how to make them and ours are actually even better. It may be because we usually choose to do the shucking ourselves and once you’ve made that kind of commitment to the process, it just might actually add to the taste too. I mean, you wouldn’t bother to shuck if it wasn’t love, right?
Awhhh, Shucks!
To shuck or not to shuck. For me, I had to start shucking myself because you actually save about .50 per oyster, or more. It’s also a little bit of fun. Ok, sure I’d rather have my own personal shucker, but I don’t mind.
But remember whenever you shuck, wearing a glove is a must!😉. You need a shucking knife and glove🧤. It’s also fun if everyone shucks together! You know, it’s friends who shuck together, stay together.

Then go to your fish market. I think Costco even sells fresh oysters on specific days. Just make sure you pick up your oysters the very day you’re going to be eating them and keep them in the coldest part of your fridge. Hold the oyster with the flat side up, rounded part of the shell underneath. Put your 🔪 knife tip into the hinge. That’s the back of the oyster where the top and bottom come together.
You just place the knife edge into the hinge, and cut down, then and lift up. Be careful to preserve the liquor which is in the rounded part of the shell. Then set the open oyster on a bed of crushed ice and continue until they are all open. Discard the flat top of the shell. Some are tougher to open than others. It just takes a few to get the hang of it.
The Roast
Once oysters are shucked, they need to be eaten quickly. We melt the butter on the grill itself, add a bit of chopped garlic. Then we brush the shucked oysters with the butter and set them right onto the grill. The oysters cook right in their own shells, with the flavor of their own liquor, butter, garlic, lemon and parsley.
I bought a fancy grill pan for oysters, but the truth is, you don’t need one. They come in their own perfect individual grill pans, their shell. Just set them on a direct flame and let them roast for about 3-5 minutes. Just until the butter is sizzling. Then to serve, just hit with a bit of freshly chopped parsley and some 🍋lemon wedges.
They are absolutely delicious and addicting too! Enjoy with your favorite cocktail or a glass of wine or a icy cold beer, and Bob’s Your Uncle! I know you want to try one now, don’t you?
Fire Roasted Oysters with Garlic Butter and Parsley
Ingredients
- 2 dozen oysters
- 1/2 cup unsalted butter, melted
- 3 cloves garlic, finely minced
- 1/3 cup parsley, chopped
- freshly ground pepper
- 2 lemons cut in wedges for serving
Special equipment - oyster shucking glove and knife, platter of crushed ice
Instructions
- Rinse oysters then shuck.
- To open oysters, Hold the oyster with the flat side up, rounded part of the shell underneath.
- Put your knife tip into the hinge. That's the back of the oyster where the top and bottom come together. You just place the knife edge into the hinge, and cut down, then and lift up. If necessary, once the hinge has been cut, you may need to cut along some of the seam to open fully.
- Be careful to preserve the liquor which is in the rounded part of the shell.
- Set the open oyster on a bed of crushed ice and continue until they are all open. Discard the flat top of the shell.
- Once oysters are shucked, they need to be eaten quickly.
- Add butter and minced garlic to a sauce pan and melt directly on the grill.
- Let the garlic flavor the melted butter for about 5 minutes before adding to the oyster.
- Using a brush or a spoon, add butter to each individual oyster. Either brush liberally or add approximately 1 teaspoon of butter per oyster.
- Set them on the grill on over direct heat/flame and let them roast for about 3-5 minutes. Just until the butter is sizzling. !To serve
- top with a bit of freshly chopped parsley. Serve with lemon wedges.
