A Peach Of A Summer Picnic Tradition
If you love baked beans this is for you! If you really don’t care for baked beans, that was then and this is now! These beans are the most delicious blend of salty bacon 🥓, sweet peaches and jam 🍑 brown sugar, smoky, caramel bourbon 🥃, tangy vinegar and creamy beans. These are not the watery, old canned beans from your childhood! They’re easy to make and a whole lotta DELISH! An absolutely perfect side dish for any summer BBQ party.
There really is nothing like a homemade batch of slow cooked, rich, baked beans. It’s that time of year when you don’t want to heat up the house with the oven either. These beans can cook right on top of the cook top, no heating the oven required. It’s going to be an unheard of 111° degrees today. I live in San Diego, California. And, I know it can warm up here, but that’s about the highest number I’ve ever seen. And, it’s not even a “dry-heat”! It’s so unbelievable hot this weekend, that we’re not even going to BBQ a thing. Everything is going to cook low and slow right on top of the oven, but if it’s not too hot for you, go ahead and bake them in the oven, even better!
Peaches and Bourbon in my Baked Beans!
I should have just called this 👩🏻🍳 blog what it really is, an 🧡ode to 🍑peaches and 🥃bourbon. I don’t know what to say, but once you start writing about the food you make, you realize you have some serious patterns of behavior. Now, you know my true self. I guess it’s better than therapy? I love bourbon and I love peaches and I love it when they’re paired together. This is a perfect match. What a southern comfort! 💖
I don’t have a peach harvest yet, but I still have my peach jam from last summer, so it’s going in the pot. I also happen to have the most delicious peach flavored balsamic vinegar.
It really does add a great peachy 🍑 tang to the beans. If you can’t find peach flavored vinegar, than use regular balsamic vinegar for this recipe.
How To Make It
This is so easy! Just brown the bacon in a large dutch oven. Drain the bacon 🥓 on a sheet of paper towel, then crumble the bacon and set aside.
Into the bacon fat, add the chopped onions and bell pepper and let them cook until onions are translucent and picking up any brown bits from the bacon. Sprinkle with a little salt and black pepper and let it cook another minute. Next, add the bourbon, liquid smoke, cayenne pepper, garlic powder and vinegar. Now, time to add the drained beans and stir. Add ketchup, brown sugar, jam and chopped peaches, and and crumbed bacon. Add 2 cups beef or chicken broth and let the mixture simmer on low for 4 hours or bake in the oven covered for 1 hour 15 minutes at 350 degrees.
Ingredients
- 1 lb bacon
- 3 medium onions, chopped
- 6 15 oz cans great Norther Beans, drained
- 1 1/2 cups ketchup
- 1 cup packed dark brown sugar
- 1 cup peach preserves
- 1 can preserved peaches (in water) with liquid, chopped
- 1 cup bourbon
- 1/4 cup Peach Balsamic Vinegar or 1/4 cup regular balsamic vinegar
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon garlic powder
- 1 tablespoon hickory flavored liquid smoke
- 1 large red bell pepper, chopped
- 1/2 teaspoon cayenne pepper
- 2 cups beef or chicken broth
Instructions
