Left Over Bread!š¤š
For me, that’s a bit like saying, what should we do with all this left over wine?! It just doesn’t happen. But, just in case it ever happens to you, why not try this bruschetta? I recently made some homemade fresh, French Bread https://wp.me/p9KEfL-yL. I also happened to have a nice batch of my favorite homemade ricotta cheese https://wp.me/p9KEfL-9P. Now, put the two together and you’ve got a combo to as perfect together as peanut butter and jelly, pizza and cheese or cake and ice cream. Even if you don’t want to make each one of the ingredients, these two were meant to be together. You can pick up some bread and a little ricotta at the grocery store and put on your own creative spin. Just add your favorite things on top and you’ve got a super easy, quick and tasty first course – DONE!
The Recipe
I have a million versions of this bruschetta. I use sliced baguette, about 1/2 inch thick and brush lightly with olive oil. If I’m doing a lot, I may just use the oven broiler, but the preferred method is to use the grill pan and get some char marks and added flavor. You may like to add a light sprinkling of salt and pepper directly to the bread before you add your topping.
Once the bread is grilled, add a slather of delicious, if not homemade ricotta cheese. Then, use your imagination and add as many different toppings as you like. The traditional method is chopped tomatoes with olive oil and basil. My versions are all a bit different. There are no rules you have to follow. Just add what you love.
A favorite of mine and my holiday platter show stopper is to substitute goat cheese mixed with rosemary for the ricotta and I top it with my homemade fig jam and a spoonful of fresh pomegranate seeds. It’s honestly, the perfect bite. Bitter, Salty, Sour and Sweet! I’m sure I will come back to that recipe near Thanksgiving!
Ingredients
- 1/2 baguette, sliced to 1/2 inch slices
- olive oil
- salt
- pepper
- 1 cup ricotta cheese
- Optional Toppings: A fruit or vegetable: Cherry Jam, Strawberries, Tomatoes,
- Followed with an oil or vinegar: Olive Oil, Balsamic Vinegar,
- Followed by a fresh herb, such as parsley, basil, thyme.
Instructions
- Slice bread to 1/4 to 1/2 inch thick. Brush lightly with olive oil, salt and pepper. Grill until lightly toasted on both sides. (I use my indoor grill pan and sometimes I use my grill pan).
- Spread each toast with about a tablespoon of ricotta cheese, then top with your favorite fruits or vegetables. Top with a little olive oil and or balsamic vinegar and a fresh herb.
