Deliciously Fun, Less Guilt 👩🏻🍳🥑🍩
If you’re looking for something fun to make with your kids or grand-kids, this might just be the perfect recipe, Baked Donuts. I’ve replaced the butter with avocado and reduced the sugar to a reasonable level. They’re baked donuts, not fried, so you can put all the decadence (or restraint) into the topping and decorating! That’s where all the fun lies anyway, right?
Replacing butter with avocado is my new favorite thing to do. We all know that avocado fat is better for us than the saturated fat in butter.
I wish I could say that was my sole rationale for the switch up, but there are a few other reasons too. I don’t have a butter tree. Thank goodness for that, believe me, but I do have avocado trees. Butter is expensive too. I hate to pay for something that I can basically pick off a tree, so there you are. I know everyone doesn’t have a ripe avocado at their fingertips, but maybe when you look at the pros and cons, you’ll give the avocado a try too. The only negative, is a slightly green tint to the finished baked donuts, but that’s completely covered with all the yummy toppings! Here’s how I made these!
Avocado, The New Butter in these Baked Donuts
Prepare two donut pans by spraying lightly with a non-stick spray, for total of 12 donuts.
In the bowl of your food processor, add 1 large ripe avocado and let it puree on high for about 1 minute, until very smooth.
Add to the bowl of your mixer with the paddle attachment and proceed as usual. If you like, you can use 1/2 cup softened butter instead. I won’t tell anyone! Add the sugar and allow the mixture to beat on medium high for about 2 minutes. Add the room temperature eggs, one at a time until fully incorporated. Add vanilla lemon or almond extract and continue to beat for another minute.
In a separate bowl, add all the dry ingredients, flour, salt, baking powder, baking soda, nutmeg and cardamom. Whisk to mix, then add slowly to the wet mixture alternating with the milk. Do not over mix, stop mixing as soon as incorporated. Add the batter to a large plastic bag, snip the end and evenly add to the donut molds, evenly.
Bake for 15-20 minutes. Remove and let them cool completely.
Decorating!
Once the donuts are completely cool, it’s time to unlock your inner bakery desires. I selected miniature chocolate chips, sweetened coconut, and of course, rainbow 🌈 sprinkles. The “glue” /glaze a simple mixture of confectioners sugar and a little vanilla and milk. Mix the ingredients, then choose the colors. First I colored a few just with the white icing. After, I separated the rest of the glaze and colored one batch light pink and the other blue.
Take your donut and just put the top half right into the glaze. Use a knife to smooth and even the surface, then top with your favorite sugary delights. Other ideas are of course, your favorite breakfast cereal, maple flavors with bacon, you name it! Get crazy and have fun!

Ingredients
For the Donuts
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cardamom
- 1/2 teaspoon nutmeg
- 1/2 cup brown sugar/packed
- 3/4 cup granulated sugar
- 1 whole, ripe avocado, split/pit removed
- 1/2 cup brown sugar, packed
- 3/4 cup granulated sugar
- 2 eggs, room temperature
- 1 teaspoon vanilla
- 1 cup milk
For the Icing
- 2 cups confectioners sugar
- 1 teaspoon vanilla
- 2-4 tablespoons milk
- Optional: Food Coloring and toppings (mini chocolate chips, sweetened coconut, sprinkles, cereal, etc.)
Instructions
- Preheat oven 425
- lightly spray 2 donut molds (total 12 donuts)

Add vanilla and continue to beat for another minute.
- In a separate bowl, add all the dry ingredients, flour, salt, baking powder, baking soda, nutmeg and cardamom. Whisk to mix, then add slowly to the wet mixture alternating with the milk. Do not over mix, stop mixing as soon as incorporated. Add the batter to a large plastic bag, snip the end and evenly add to the donut molds, evenly.
- Bake for 15-20 minutes. Remove and let them cool completely.
For the Icing
- In a medium bowl, add the confectioners sugar and the vanilla. Slowly add the milk and mix. You want the consistency of thick honey. Color with food coloring or gel. Dip top of donuts into the icing and smooth with a off-set knife. Top with your favorite treats. Let dry and set.
- If not eaten immediately, keep tightly sealed for 1-2 days.
