This Idea Is Not Half Baked, It’s 100% Baked
Before I made these, I asked my husband if he thought they sounded good. He did not. Hmmm, well, I was determined to give them a go. I’ve had fried avocado before and I’m pretty sure we both liked it. I’m afraid he thought maybe baked fries sounded too heavy or something. So, I made them anyway and guess what? He loved them. What’s not to love? (Remember, avocado is the good fat, not The evil fat :))
I’ve said it before, I’d almost rather do anything, even dipping my jelly covered bare toes into a red ant hole, than to deep fry any food. I’m telling you that the taste of these baked avocados is incredibly devilish, I think they taste like they are fried, just fried well. If you know what I mean. Pair them up with a delicious spicy lemon sauce and you’ve got a great appetizer or side dish. This is how I made them.
Spiced, Breaded and Baked
Preheat your oven to 425°. take out 3 medium bowls. In the first bowl, put 1 to 2 eggs, depending on how many fries you’re making and give them a good scrambling. You’ll need roughly one egg for every large avocado. In the next bowl, add flour, I used all-purpose, but you could use any gluten free flour. In the last bowl, bread crumbs. Same here, you can use any type of gluten free bread crumb or substitute. I seasoned the flour with garlic powder, onion powder, seasoned salt and freshly ground black pepper and a little paprika.
Slice up the avocados. I kept them about 1/2 inch thick and that worked well and none of them broke in half or became hard to work with.
Dredge the avocado pieces into the flour, then in the egg, then into the breadcrumbs. Put the pieces on a baking pan lined with aluminum foil or parchment paper and spray the foil or paper with non stick spray.
Bake for 15 minutes, then turn and bake another 10-15 minutes on the other side. They should be brown and crispy.
What’s A “Fry” Without A Dip? You Gotta Have The Sauce!
Make the spicy lemon dipping sauce. I made this one quickly and easily. Just use Greek yogurt or mayonnaise, lemon zest, lemon juice, salt, pepper and your favorite hot sauce. I like sriracha the best, but any work, even tabasco is fine. Spice it up the way you like it! Serve hot and with the dipping sauce. Enjoy!
